Tonight I made a quick, easy, and nutritious dinner. I love dinners like this one because they combine both food in the pantry that stores well and fresh food in the fridge- very common of the meals I like to make. I also strive, as I did here, to balance veggies, protein, and carbs in my meals. I am not always perfect, but I try..
I made a stir fy over rice noodles with fresh zucchini and squash (from the Fort Greene fresh market)
some Trader Joe’s extra firm tofu, garlic and a littler red onion…
and Thai Kitchen’s rice noodles. I pressed the tofu for 15 minutes under some very hefty pots to get it nice and dry, ready for a light fry, then added the veggies and lastly, the soft noodles. I added a little bit of Trader Joe’s yellow curry sauce and maybe 1/4 a cup of light coconut milk (I don’t really measure!).

The noodles take 10 minutes to cook, just need a good soak in some boiling water. I also put plenty of this guy on top (love this stuff):
Loren doesn’t really like stuff to spicy, so I save it til the end. Oh, theres my cat, Buzz, making his blog debut. Dinner was delicious!
Over all, it was an easy and manageable meal without too much clean up! I love that (though I must admit I have a pretty sweet deal over here. When I cook, Loren does most of the clean up. I think I get to have all the fun 🙂 ).
I also had a couple bites of a large oatmeal chocolate chip cookie that I bought yesterday at Ted and Honey, a really cute sandwich shop/ cafe in Brooklyn near our apartment. It was delicious. When I buy a large cookie like this one, I like to eat in over the course of a few days, so I can savor it without overindulging at once. (I had a couple more bites than you see here).
I also drank a glass of coconut water because I was thirsty! I love this stuff- its like nature’s gatorade. I swam some pretty hard laps today, racing against Loren (I may have beat him but don’t tell anyone) and I was pooped.And just so you guys know what I am dealing with over hear, trying to keep my portions on track, Loren not only had a serving 2 times the size of mine, but then proceeded to reheat a huge plate of the spaghetti with turkey tomato sauce I made last week.
