Today was a pretty regular day of eating. Except that I started taking pictures of it. In public. That was weird.
I woke up this morning to my usual beverages of black tea + rice milk and a glass of water with Emergen-C. I’m addicted to this stuff!
For breakfast, I cooked a sunny side up egg on a piece of ezekial bread. A little trick I learned to get the egg cooked but nice and runny is to cook the egg on medium heat (I cook in a little bit ov EVOO), sprinkle with salt and pepper, and cover the pan after 1 minute with a lid. But, before closing with the lid, drip a little bit of water inside of the lid. This creates steam and helps the egg cook while the yoke stays nice and soft. I also had some fresh pineapple and strawberries that need to be eaten.

Since I am doing some work from home this week, I went to a coffee shop to write. I have trouble concentrating at home all day. I am much more productive with other busy workers around me! If not, I hang out with guys who do this all day:

Needless to say, it doesn’t help me with the productivity.
I had a passion tea with a little bit of honey when I first began working:
And, later, a tuna pita. It was messy, so I ate it like a salad. Ate all of the tuna + veggies and about 3/4 of the pita.
A couple of hours later, my stomach was grumbling, so I tried a Pure bar that I had picked up at Trader Joes:
It was good! It tasted like a healthy brownie. I think I like the consistency better than Lararbars- not as mushy!
Today was my day off from the gym, but I still felt like moving around. So I went for an hour long walk in my sneaks around the neighborhood. It was hot and I was sweating by the end! Around 5:30, before I went into Manhattan for an appointment, I had one of these. And chugged some water!
For dinner, we made a big salad with spinach, cukes, carrot, pepper, tomatoes, and avocado. I added golden raisins, onion, and a sprinkle of feta to mine. The bf likes to stay away from those things… 🙂 I added a little bit of peanut butter to last night’s noodles to make a sauce. It was an awesome addition!
I also made a yummy drink of mostly seltzer water, a small pour of POM cherry + pomegranate juice, and a squeeze of lime. Loren snapped this photo of me in action:
Very refreshing, very low in sugar!
And I was good today and remembered to have one of these!
