I woke up this morning like all others- wanting caffeine! I don’t drink coffee (went off of it completely 3 years ago) but I drink a nice big cup of black tea with milk every morning. It does the trick!
To eat, I had a Nature’s Path waffle with apricot preserve and almond butter, with a cut up peach and red plum that I bought at the farmer’s market yesterday. I wanted another waffle for a “waffle sandwich”, but I only had one waffle left 😦 ! Need to get more of these babies ASAP.
I love fresh fruit!
As I expected, this didn’t hold me over very long :(. I really need that extra waffle for staying power!
For lunch, I re-heated the leftovers from Friday night’s dinner at Joya. We didn’t have a microwave in our last apartment. I know many people feel it is healthier to not use one, but I must say that I am so happy we have one now. I try to make most things on the stove, but sometimes the micro is just key! There wasn’t much left from dinner except for veggies and a couple of noodles, so I added a cup or so (I don’t measure) of chickpeas for protein and fullness factor. They did the trick!
Now, I don’t know about you guys, but I have a hard time eating a lot of my favorite veggies in their cooked form. I much prefer them raw- especially carrots and peppers. I’m not sure why. I think it partly has to do with growing up in Miami. It was so hot that we ate salads all the time and had raw veggies with dinner almost every night. And I have preferred them that way ever since. I think mushrooms may be the only veggie I would rather eat cooked.
I tried to eat most of them here, but I could not bring myself to eat all of the carrots or peppers…
What about you guys? Do you have this issue? If so, what do you prefer?
