I had a very relaxing Sunday- and was able to get some law school application work done as well!
Around 3:30, I had a crunchy, cheesy snack! Trader Joe’s plain popped chips and TJ’s cheese puffs with a string cheese!
This afternoon, one of my best friends from college, Annie, who recently moved back to NYC after far too long in England, came to visit. We took a long walk around the neighborhood. It was hot!
We split a pink lady apple and a pluot (plum + apricot hybrid) when we got back. Pluots are delicious if you haven’t tried them- sweet and tart at the same time.
And then Loren got home from his trip in time for dinner! I made the three of us a little Middle Eastern spread of whole wheat pitas, tabouli, babaganoush, hummus, olive tapenade, labne, organic greens (with raw squash blossoms) from the fresh market, and a salad I put together of chickpeas (leftover from the giant can I used at lunch), cucumber, a “German” heirloom tomato from the fresh market, golden raisins, white onion, EVOO, lemon, and balsamic. The idea was to stuff all of the delicious salads and spreads into the pitas.
Oh, there were grape leaves too! (And I always throw hot sauce in there).
I love having dinner with two of my favorite people in the world. 🙂 I coaxed them into making their blog debuts. They were bound to show up sooner or later!
I love Middle Eastern flavors. Loren does, too. He actually spent six months living in Egypt and has traveled throughout the Middle East.
My pita was stuffed to the brim with pretty blossoms!
It was a light and satisfying summer dinner- and there are plenty of leftovers to enjoy this week.:)
I’m off to pack… I will be in Philadelphia for the next four days for a work-related orientation event, and I will do my best to blog from there everyday. I’m not sure what the internet situation will be, but I am determined to find some wi-fi. The food for the week is also taken care of, so I have no idea what to expect. I hope there are some healthy choices! I am bringing a pack of granola bars, tea, and emergen-C just to be safe!
