My breakfast sandwich held me over really well this morning- I didn’t need a snack- but I was verrry hungry around 1 pm and excited for my delicious leftovers!
I had a nice, big piece of lasagna (this plate is really small… I promise it wasn’t THAT big! 🙂 )
As you can see, I had the real pleasure of eating at my desk while working. Kind of messy- sorry! Atleast I sit facing a nice big window and can see the sun!
The lasagna was even better today because all of the flavors were able to set in. The eggplant was softer, too, and soaked up lots of good sauce!
I love how balanced this meal was. I know lasagna has a reputation for being really heavy and fattening, but it doesn’t have to be. This one has lean protein (beef), lots of veggies (spinach +eggplant), calcium (cheese) and a little bit of carbs (2 thin layers of noddles). After eating, I feel very satisfied, but not overly full or bloated.
So, for those of you who may be scared of making lasagna because of it’s “bad rep”, I hope you’ll give it another chance!
