We were feeling lazy tonight, so we just ordered take out from Joya, my favorite Thai joint in town. I ordered a tofu and mixed veggie stirfry in garlic sauce and a house salad with peanut dressing. I had a small scoop of white rice on the side.
A great tip about curries or stir fries at Thai restaurants is to take the veggies/ meat/ tofu out of the sauce and put it onto your plate. That way, you still get the great flavors of the sauce, but without tons of the oil, fat, and calories.
Mmmm…. broccoli in garlic sauce = heaven. I topped my veggies with Siracha!
I just used a few forkfuls of the peanut dressing on my salad. I looove peanut sauce!
This dinner was just what I was craving- no cook and really easy clean up!
Now I’m working on getting organized so that I know what to work on in the next week. I love “to-do” lists- why don’t I make these more often? It feels so good to have all of my “to-dos” on paper, so I don’t have to keep spinning then round and round in my head!
