I set my alarm for 8 am this morning so that I could get a good start to the day (that’s pretty early for me- I am NOT a morning person!). I immediately put my swimsuit on and headed to the pool. I swam for 30 minutes straight and pushed myself really hard. I thought about all the things I have been stressed about and, by the end of my swim, I felt great. Swim it out!
On the way home, I picked up some goodies to make breakfast with. My parents brought H&H Bagels over yesterday and I knew I wanted to use them. I bought wild Alaskan smoked salmon, berries, and bananas. I toasted a whole wheat bagel, scooped out the middle and topped it with a little bit of reduced fat cream cheese, capers, onion, and smoked salmon. I also put together a side of fruit salad and some tea. And then I woke Loren up to eat with me!
Yum! If you have never tried smoked salmon with capers and onion, I highly recommend it. I love tomato with it as well, but I didn’t have any.
Smoked salmon and bagels is a family tradition, so eating this always reminds me of home.
I ate my whole plate, except for the banana- I was just too full, and gave it to Loren, the human garbage disposal!
