Sorry for the very short-winded (is that a saying?) post this morning.
I had a very hard time getting to sleep last night. I was tossing and turning and my mind was racing with worries. I tried all of my Stressbuster tricks, and did some deep breathing, focusing on relaxing each muscle in my body. I don’t know what time I finally fell asleep- but I eventually did! I over “snoozed” my alarm this morning, was late to the gym, was late getting home, and, of course, was rushed trying to post!
Anyhow…. the day calmed down after that :). My protein-packed breakfast held me over really well- it was four hours before I felt hungry again. And, when I did, I enjoyed the awesome pasta salad I made last night.
I boiled a pack of pesto tortelini last night, ran it under cool water and mixed it with an orange and yellow pepper, a can of garbanzo beans, and a ripe tomato. I topped the salad with some goat cheese, olive tapenade, red wine vinegar, and a little olive oil (plus salt and pepper).
It kept really well- all of the flavors were even better today after sitting in the fridge together for a night.
I made a big bowl last night and packed 1/3 for me and about 2/3 for Loren. I gave him more of the pasta, and gave myself more of the veggies and beans. It still satisfied my pasta craving, but I was also happy to be getting lots of veggies and good protein instead of just carbs. It is a great, easy lunch recipe.
I felt great all afternoon and had tons of energy! Around 4, I had a snack of cottage cheese with an all natural fruit pack (peaches and pears in real fruit juice) from Trader Joe’s. I love this combination- cottage cheese and canned peaches are a match made in heaven!
When I got home, I was met at the door with a very happy surprise!
The awesome people at O.N.E. (One Natural Experience) had seen my post a few weeks ago about my undying love for Coconut Water, and offered to send me some free samples. I was so excited when I saw the variety of O.N.E. juices in the box!
The package included plain and passion fruit flavored Coconut Water, along with some new juices I have never tried: a Coffe Fruit drink and an Acai juice. The Coffee Fruit drink looks really interesting, especially for someone like me who does not like coffee because of all of the caffeine. I’m a tea drinker, and the coffee fruit juice is actually not made from roasted coffee beans- it is made from the raw coffee bean and the red fruit surrounding it. A serving of the Coffee Juice has the same amount of caffeine as green tea- which is perfect for me!
I was actually really dehydrated when I got home, so all I wanted was some plain Coconut Water. This hit the spot!
For those of you who have never had packaged coconut juice, it tastes exactly like drinking straight out of a coconut… thats the best way I can describe it! Which reminds me of growing up in Miami and throwing coconuts against the bumper of my parents car to try to split them…. whoops!
I swear, within minutes of drinking this stuff I felt worlds better. It really does have all of the re-hyrdating benefits (and more) of sports drinks, but without all of the junk like the sugary syrups and mega calories. I thought the back of the O.N.E. container did a good job showing the comparison:

I’m going out to dinner tonight (again!). I swear, I don’t normally go out this much, but with my parents in town, my anniversary, etc., it all starts to build up. Tonight we are having dinner with some friends we haven’t seen for a long time, and have been trying to make plans with for a while, so I am really excited.
