One thing that amazed me about Portland was the number of people with lush, fruitful, spacious gardens in their backyards. Shona, the woman we stayed with, and her husband, Michael, have such an amazing garden. They grow heirloom tomatoes, squash, cucumbers, all kinds of lettuce, swiss chard, mustard greens, carrots, beets, baby tomatoes…. the list goes on.
They also have apple and plum trees, and concord grape vines in their backyard…. just like New York living, right? I was in heaven.

So we picked a bunch of veggies while we were there and yesterday we put together an outdoor feast using lots of great fresh, produce!
Yes- they grew that cucumber. Isn’t it the biggest cuke you have ever seen? (Ha, almost wrote the wrong thing there!)
Shona and Rebecca put together this awesome spread, including caprese salad and spinach, cuke, and carrot salad.
Plus beef and chicken dogs… yum! I had lots of salad with some blue cheese on top- yum! I skipped the bun and had 1 chicken and 1 beef hot dog instead. It was yummers!
Just one of the many reasons why I must get out of NYC… soon.
P.S. I fell in love with the most adorable dog this weekend, name Louie- he is a small but mellow fellow. He sat on my lap for hours.
Loren’s brother’s cat, Gus, also fell in love with Louie….
