Good evening, all!
I am feeling really drained tonight- and have been all day. I’ve slept about 6-7 hours every night for the last week and thats just not enough for me. I need to make sleep more of a priority and get to bed earlier!
I woke up this morning (after snoozing in) and had a cup of tea. I made myself a waffle sandwich with PB and jelly, but this time with CRUNCHY green apple instead of banana!
Yum! Love that raspberry jam! The apple added such a nice, tart crunch and contrast to the sweet, soft waffle. DO try this at home!
I had to work straight through the morning, assisting in a classroom, so I had a Baby Bell cheese for snack.
For lunch, I essentially had the same thing I made last night for dinner. It was still delicious! I added some mustard to the wrap, used cucumbers and tomatoes again, and the cod- which was cold, but still soft and flaky. It looked just like this: (pic from last night).
I worked all afternoon and was starving by the time I left. I ran into a convenience store on the way home and bought a bag of Pop Chips (BBQ flavor- the best!) and scarfed it down on the way home, along with a string cheese. I’m sure I looked like a crazy person walking down the street with orange powder all over my face.
I don’t have much in the fridge tonight, and I really felt like just vegging out on the couch, so I wanted a quick, nutritious and healthy dinner. I drank an Emergen-C to try to boost my energy a little while I made dinner.
I looked through my pantry for some ideas and I saw a can of Trader Joe’s wild salmon- and dinner was in the making! I put together a salmon salad combining the salmon with mayo, yellow mustard, a pinch of curry powder, relish, capers, lemon, black pepper, white onion, and diced cucumber. I served the salad (that would fit) on a hot whole wheat bun, and had the rest with sliced cucumber dressed in lemon on the side.
I’ve never tried all of these flavors together and I loved it! I would definitely eat this again.
It was almost like a healthy lobster role! I go to Maine with one of my best friends, Anna, every year and have the best lobster roles up there. This was almost like going up for a visit. Almost.
Alright guys, I am making it my mission to relax tonight and take some time off from doing any real work. Do you have any advice for me to boost my energy?? I will take it!
I am off- now watching Hung for the first time on HBO on Demand- its hilarious and racy! Love it!
