I slept til 9 this morning and woke up feeling well rested. Last night I felt like I was getting sick, so I drank lots of water, took my vitamins, and went to bed. I feel muuuch better today, though I still don’t feel like my energy is at 100%. I decided to skip the gym and go to a yoga class sometime this afternoon instead. It will give me something to look forward to while I work!
Breakfast today was pulled together from what we have left in the fridge- the rest of the fruit that I picked up yesterday, scrambled eggs, Morningstar “sausage” patties, and Quinoa Bread. Yes- Quinoa Bread. I saw it at Trader Joe’s last week and it looked interesting. It doesn’t have that much more protein than regular bread, which surprised me- just 3.5 grams a slice, but it isn’t just made from quinoa. The first ingredient on the ingredient list is whole wheat flour, so that’s telling…
It was a protein filled, very balanced meal!
I topped my slice of bread with some reduced fat cream cheese. The bread had a nice nutty flavor and was a little bitter, but good. I would buy it again!
I love hot sauce and ketchup on my eggs. Can you tell yet that I’m a condiments gal?
I try not to eat too much processed soy anymore for environmental reasons, but I have a soft spot in my heart (and tummy) for these “sausage” patties. I prefer them to real sausage. So, they are my one processed soy indulgence. Can’t be perfect, right?
I also love my fruit!
I feel great now- satisfied but not too full. And I feel even better for making a delicious brunch at home instead of spending lots of $$$ at some place out in Brooklyn.
It is sunny and beautiful here today, and I will enjoy working next to my big window :). Hope its nice wherever you are and that you can get out and enjoy the day!
