I spent the evening registering new students for our ESL evening class in a part of Brooklyn called Sunset Park and didn’t get home til 8:45. By that time, I was haaaangry (hungry + angry). All I wanted was food. I even told Loren I couldn’t talk/ listen until I ate (I know, I’m mean sometimes). So I made the quickest thing I could- a sandwich!
Quinoa bread, Applegate Farms turkey bologna, a juicy tomato, and a little bit of cheese. Plus olive oil mayo and tooons of yellow mustard.
It was quick and easy. I actually heated the sandwich in the microwave for 20 seconds before adding the tomato. I’m surprised I had the patience for that- and for taking pictures!
I was still hungry, but again, feeling lazy and uncreative, so I just had one more slice of bread with 2 more slices of bologna. Maybe I’ll snack on an apple later…
This afternoon for snacks, I had the last of my BBQ pop chips 😦 and some plain ones that I mixed in. The plain ones are not nearly as good, but tasted great with the BBQ saltiness/ goodness on top!
Around 6, I munched on few small cookies at the meeting because my blood sugar was feeling low- sorry no pictures! I could have eaten 20, but I limited myself to what I thought was about 120 calories- just didn’t want to load up on empty cals and sugar that would go right through me.
Now I’m off to REST before another long day tomorrow. Have a great night, all!
