Before class tonight, I snacked on the other half of my Middle Eastern quesadilla and an apple. Since I was teaching the 6-9 class for the first time, I had no idea how I would feel in terms of hunger/ energy level. But this was the perfect amount of food! I ate around 4:30 and it kept me full and feeling good.
And when I got home, I was greeted with this:
Don’t I have the best boyfriend in the world? I feel very lucky!
He baked falafel balls from a mix from Damascus Bakery (all natural ingredients)…
Cut up some fresh veggies…
AND baked delicious acorn squash that we picked up this weekend at the farmer’s market! How awesome is he? And he waited until 9:15 to eat so we could eat together!
I ate half an acorn squash, some fresh veggies, and the falafel balls. I didn’t need that much food because I had eaten a substantial snack at 4:30, so I didn’t eat my pita or much of the spreads on the table. It was a very yummy and really balanced meal…. most importantly, it was made with love!
As you can imagine, I’m pretty tired so I am going to help clean up, take a bath, and go to bed! I’m feeling much better in terms of energy. The light exercise (long walk) mixed with lots of sleep was the perfect mix for getting me back on track today.
