I ended up getting out of work much earlier tonight than I expected, which was nice! When I headed to work around 6, I wasn’t feeling hungry at all, but felt I should eat a snack because I hadn’t had anything all afternoon and didn’t know what time I would be home. I had a chocolate chip KidZ Bar.
All I could think of on the walk home was soup. I knew we had a great can of yummy Imagine Organic Chicken Noodle Soup in the pantry. Loren was really sick a few months ago and we discovered these… he and I both love them!
I love this soup, but it’s very low in calories (180 cals per can), so I bulked it up with leftover squash from last night.
I just scraped out about half of the squash into the pot of chicken soup as it was heating up on the stove. I also had some reduced fat wheat thins and cottage cheese on the side. Really weird combination, I know, but it worked!
The soup was sooo comforting and yummy. I’ve felt down for no reason all day, and I really believe that chicken noodle soup makes it all better! And I love that this soup is all organic.
This soup is also really nicely seasoned… I just added some black pepper but it didn’t need any salt. The squash was a great addition- it mixed nicely with the carrot, celery, and chicken.
The cottage cheese and wheat thins helped round out the meal.
I’m alone for dinner tonight- Loren is out with friends, so I’m just lying low. Going to give myself a much needed break and hang out with the trusty DVR for a while.
