So, between running around and not having time, and not having groceries, my eats today were a little sad and pathetic. And kind of funny- so bear with me! For lunch, we had no bread, no lettuce, no tomato, but all I wanted was a turkey bologna sandwich (Applegate Farm’s). Soooo, I made do:
A whole wheat wrap (rather small if I do say so myself) with bologna, mustard, banana peppers, and a slice red pepper (fresh vegetable that was left!).
It was actually pretty good! And satisfying. I had a ripe nectarine as well- nice and juicy!
It wasn’t a very big lunch, so, as expected, I was hungry pretty early. I ran a few errands in the city, and when I got home around 5, I was ready to eat. Which was good, because I had to work from 6-9. So I decided to have a small dinner.
Again, ran into the “want food but don’t have much” predicament, and then I saw my Amy’s Enchilada’s in the freezer! I loooove these guys- very cheesy with an awesome sauce.
The ingredient list is made up of words I can recognize- another reason why I love Amy’s.
These enchiladas are awesome, but unlike most of Amy’s stuff, they are kind of high in calories- and not that packed with protein. Each one had 240 cals. So, I decided to just have one and try to bulk it up with something else. I looked around for some black beans or corn, but couldn’t find any. I did, however, find another Amy’s product that has been quietly and patiently been waiting to be opened.

These are the healthiest and tastiest “refried” beans ever!
Mmmmm… canned food for dinner. I decided to place the enchilada over the beans after it had been in the microwave for about 5 minutes. Then, I heated the whole plate for another minute. I topped the plate with the only fresh veggies I could find- the other half of the red pepper from lunch (sad, I know). I also added some chopped jalapenos.
It was actually really, really good! I’m telling you guys, the people at Amy’s know what they are doing- and no, they haven’t sent me anything for free (Though I’m very open to that, Amy’s people, if you are reading this! 🙂 )

I also had an apple from the Farmer’s Market.
I thought I might be hungry for another light snack/ meal after class, but all I wanted at 9:15 on my walk home was some froyo… and that’s what I got! A special treat from Tasti-Delight- a small cup of Oreo and Peanut Butter swirl.
I didn’t have my camera but I did have my trusty camera phone with me!
It was actually a pretty tasty food day, considering my options! I do realize that all of my meals today included some sort of “wrapped” food. That’s kind of weird….
P.S. Food Update! Just got hungry and had the other half of my enchilada dish! (Couldn’t keep you guys out of the loop) 🙂
