I had the most wonderful, simple breakfast this morning that reminded me of home: cottage cheese, tomato, and avocado on toasted whole wheat bread. My parents are health nuts, especially my dad. He doesn’t eat any “real cheese,” but loves cottage cheese on toast with fresh tomato and a sprinkle of salt and pepper. I made my own version at home by adding avocado.
I can’t tell you how yummy this combination is. It also make me very happy- brings me back to breakfasts with my dad in my light-filled kitchen in Miami, sitting next to him on tall stools, and nudging him to pay attention to me while he read the paper.
I like a lot of pepper and just a little sprinkle of salt.
I ate breakfast around 11, but around 9, I had snacked on a nectarine (no picture) and made some Chai Tea with the awesome contraption my mom got me last year when she was in Switzerland. Great design!
Alright, guys, I’m off. I feel like I need to shower or do some mat exercises to wake my body/ mind up a little before I can really focus on applications! I saw some great mat moves in the Shape Magazine I read last night (October issue), so maybe I will give those a try.
