This afternoon was filled with awesome eats!
Shortly after breakfast, I did the great- looking mat workout I had talked about from this month’s Shape Magazine. It was put together by a Pilates instructor and is called “4-Week Ab Makeover”. All I needed to do it was myself and my mat! It was hard- and exactly what I wanted- a challenge. I also threw some jumping jacks in there (3 sets of 50) to increase the cardio. I am sore already!
For lunch, I heated up some leftovers that Loren brought home yesterday. He works for a great company, and one of the many perks he enjoys is delicious and free lunch every Friday. This week’s lunch included a yummy veggie stir fry and brown rice.
It was the perfect addition.
The chutney is spicy and sweet, with strong fruit and curry flavors. It went really nicely with my stir-fry. I like a lot of flavor!
I then went to my local coffee shop to start yet another law school application… I am swimming in them! I was pretty productive and after a few hours I came home for a rest. Loren, being the awesome boyfriend that he is, went grocery shopping today without me so that I could work. He went to the Farmer’s Market and Trader Joe’s so that we could have as much fresh, local produce as possible. He is the best!
He also picked up some special treats- 2 wonderful goat cheeses from a dairy farm in Pennsylvania. I tried the one that he said was his favorite:
This cheese is called “Mammuth” and was basically like eating goat cheese brie. I honestly cannot remember having better cheese in my entire life!
It was as delicious as it was gorgeous!

I decided to have it on a crunchy apple from the Farmer’s Market instead of crackers. I felt that it was a healthier way to eat my cheese- and just as yummy!
Local cheese + local apple= HEAVEN.
