I was really happy when I looked back at my eats today because I ate so much “real food”- almost nothing processed. I’m making a huge effort to eat as much whole, real food as possible, so days like today make me happy :).
For lunch, I had a salad at topped with leftover falafel balls from last night reheated in the microwave, a sprinkle of feta, and a dressing of balsamic vinaigrette.
The other great thing about whole foods? Lots of pretty, natural colors- great for food blogs!
These falafel balls are awesome- nice and spicy! And I love that they are baked- all the same great flavor, but much less fat.
This afternoon, I actually worked out at the gym! YAY! I did a very light workout, but was happy to do some cardio exercise for the first time in three days. I did 20 minutes on the bike and 15 minutes on the elliptical. And a little bit of stretching.
I had to work from 6-9 tonight, so I wanted a substantial snack around 5. It was based on these two goodies I picked up from TJ’s:
Green juice (made with fruit puree/ juice, Spirulina, etc) and a low-fat raspberry yogurt. I’d never tried either of these but I loved them both!
The green juice was filled with lots of goodness…. No added sugar, nada- all natural stuff.
My bowl of yogurt was awesome. I mixed in half a banana, blackberries, raspberries, and some granola- to give it more bulk and staying power. I drank a glass of green juice that I diluted with water so it wasn’t overly sweet.
Yuuuummmm! I am not the biggest yogurt fan, but this TJ’s yogurt was really good. It’s not too thick, not too thin- just right, so I didn’t feel heavy or bloated after eating it. I will definitely be buying this again.
And look at how pretty the yogurt got when I mixed all of the real raspberries in… Looks almost like ice cream, no?
I cam home at 9 to another wonderful “Loren dinner” ready on the table. I could get used to this! Historically, Loren hasn’t been the cook in the house, but now that I have to work late 3 nights a week, he’s been taking over. And doing a great job!
Tonight we had burritos with brown rice, beans, grilled peppers and onion, tomato, lettuce, and avocado. I had a little bit of cheese melted on my tortilla- all the way at the bottom of the mound!
I love burritos that are filed to the brim with veggies. And topped with lots of salsa and hot sauce, of course.
I attempted to wrap it all up…
And was pretty successful! 😉
I had a second very small serving of rice and beans because I was still hungry. Loren had another burrito- but I restrained myself! This dinner hit the spot.
