Hi guys! Long time no see, eh?
I’ve decided to stick to posting once a day until these law school apps are all done, as that really should be my priority…. I just love blogging, though. Can’t stay away for long! 😉
Today was another pretty good day! It’s not that I felt that great, but I’m really starting to believe that I might be able to change my negative/ stressful thoughts and state of mind for happier ones if I really keep focused on it. Maybe I’m not destined to be a neurotic Jewish woman after all? I always thought that was kind of imprinted in my DNA, but now I’m seeing that I can control how I respond to my thoughts, and catch them before they get the best of me. Why make myself feel worse by going to negative mental places when my body needs me to be as strong and positive as possible to heal?
OK, OK, on to food, off the couch.
This morning, I had a delicious scramble in a tortilla using the veggies I made last night. I just scrambled 1 egg + 1 egg white and mixed the veggies in. Who knew that squash, zucchini, and sweet potato could be so good in the morning?

I didn’t have time to pack lunch this morning, so I picked up the most AWESOME sandwich at a deli down the street.
Yes, that is real. Yes, I took off some of that turkey!
It was lettuce, tomato, avocado and honey turkey (Boar’s Head- the best!) with mustard, oil, and vinegar on Whole Wheat. I sat outside again today and it was GLORIOUS. The sun was shining, the weather was sweet…
With my sandwich, I drank half a small bottle of Gingerale and read this book that was lying around my office, A Guide for Immigrants in New York City. It has lots of great information for immigrants and for practitioners like me!
The sandwich was so good, I had to photograph it from many different angles… (I guess I always do that with my food)…
After lunch, I went to a really interesting meeting in Brooklyn where I met a lot of people working in Adult Ed/ Social Services. It was so cool to hear about the amazingly varied work that is going on in the community. I passed on most of the sweets at the meeting and instead snacked on a small carrot/ raisin/ apple muffin I brought from home- sorry, no picture.
When I got home, I faced a pretty empty fridge. We didn’t have much “dinner” stuff, so I improvised. I made a kind of guacamole/ salad using a big, ripe Farmer’s Market tomato, an avocado, a little bit of white onion, and some canned corn. Mixed in some lemon and salsa and it was good to go! I served it with some blue corn chips.
I also roasted some broccoli in the oven- 25 minutes at 400. I seasoned the broccoli with salt, pepper, red pepper flakes, 4 gloves of crushed garlic, and olive oil before it went in. When it came out, I squeezed half a lemon over it and shredded lots of yummy Parmesan on top. Delish!
With some wine, of course… love my new thing! Loren and I split the half bottle left over from last night.
The lemon + cheese mixture is the secret to making roasted broccoli perfection.
The guacamole/ salad turned out really well, too. Loren was a big fan!
I just completed some solid law school work, so I’m good to go for the evening. Relaxation plans include a little bit of TV, some balance exercise, and maybe a nice walk with my guy…
