I really enjoyed reading through your “food rules” this afternoon. I am fascinated by the cultural attitudes that we have each adopted towards food and eating, and I love hearing from you all. I am really looking forward to Michael Pollan’s book on the topic.
Sooooo, today was a great day because I made it one! (My new positive attitude thing might actually be working).
I woke up and headed to the gym. I had planned on doing a light, short workout, afraid to push myself, but once I got on the bike, I was feeling great, so I kept at it! (I was also watching the Dalai Lama accept a Human Rights Award on CSpan, so I was kind of absorbed in watching him/ others speak). I pushed myself hard, doing interval training and, before I knew it, 45 minutes had passed. I was drenched in sweat and felt AWESOME! I stretched for a few minutes and headed home. I felt better immediately- I don’t feel 100% normal, but I can feel a difference from even 3 days ago. Yay!
I was in the mood for something refreshing after all that sweating, so I made a simple “smoothie” with a banana, ice, a scoop of PB, and a splash of almond milk. I also added a few chocolate chips- just for fun!
To round out the meal, I had half a cup of cottage cheese with some new granola I recently purchased. I bought it because it has no added sugar- just plain oats, cereal, and dried fruit. And it was great!
All together now…
It was a great, balanced breakfast and held me over for more than 4 hours. For lunch, I bought a sandwich again- just don’t have great lunch fixin’s at home/ I’m lazy!
Man, I love this deli. I asked for cheese on my sammie today and asked that it be heated, so that cheese was a little melted. It was awesome!
With lunch, I also had some Veggie Booty cheese puffs. Yum! These guys are cheesy, crunchy, and filling, with only 130 calories in a bag. Plus, they have no preservatives. That’s what I call a good deal!
After I had made quite a dent in my chips, I snapped a picture ;).
I ate lunch spread out over an hour, trying to savor each bite. I usually eat waaay too fast, and I am making a big effort to eat slowly and monitor my fullness. I did some more work after lunch and around 4, had a snack- a Pink Honeycrisp Apple.
When I got home around 6, I had another snack to tide me over til dinner, because Loren wasn’t going to be home til 8. I had the other half of the cottage cheese I ate for breakfast.
On the way home, I picked up ingredients for dinner: 3 Tilapia fillets (to have extra for leftovers) and a Lemon- Pepper bread crumb mix, especially good for baking. I first coated the fish with an egg + almond milk mixture, then dipped each piece in the bread crumbs (which were in a separate plate) so that both sides of each piece were fully and evenly covered. The fish went into the oven at 350 degrees for 20 minutes.
Such a quick and easy way to make a healthy dinner that still has lots of flavor!
They came out beautifully, if I do say so myself.
I also made a Lemon- curry dipping sauce to go with the fish, using mayo, yellow mustard, a few pinches of curry powder, and the juice of half a lemon.
I served the fish with leftover veggies from Monday night.
The flavors on the plate were all wonderful. Loren and I were both impressed with my cooking!
I loooove this dipping sauce! And you don’t need a lot, because it is so packed with flavor!
Of course, going along with my new healthy ways, I also had a glass of red wine while I worked/ cooked/ ate. Every bottle I will be buying for dinner will be from the $12 and under section of the wine store near us and I will give my (not very articulate) reviews here. So, hopefully, you guys will have some more inexpensive wine ideas the next time you head to the store.
I asked for a wine that was fruity and light, not too acidic, and the woman at the store recommended a French wine for $12- Le Clos de Vauriou.
It was lovely. Light, with fruity flavors, and not too overpowering. I would definitely buy this again. Loren preferred this to the German wine because it was less acidic, but I like them both. Just different.
I’m off to do a little more work and then relax on my couch, before hitting the sack. My friend Charlotte just gave me the best book, Learning To Breathe, and I stay up reading it every night instead of going to sleep. Woops! I highly recommend it!
