Today was a busy day and I’m glad to be off my feet, at home, and resting… and about to watch The Office wedding episode! Yay Jim and Pam!
I woke up this morning feeling pretty hungry and made myself a nice bowl of PB & banana oats….. with some bittersweet chocolate chips on top!
Yum! I just needed a few chocolate chips to get lots of creamy, hot chocolate taste in my oats! It’s never too early for chocolate.
With a glass of Emergen-C and a mug of English Breakfast tea.
This bowl of goodness kept me full for a solid 4 hours. Around 12, my tummy was grumbling, but I was in the middle of tutoring someone, so I had the first part of my lunch: an Amy’s Especial Burrito.
This hit the spot, but, with only 270 calories, I knew I would need something else to bulk up my lunch. An hour and a half later, I ate a bowl of 1/2 cup of cottage cheese, half a banana, and some Alpine granola/ cereal. This granola is really plain tasting because it has no added sugar, but its still tasty, just in a different way!
Later this afternoon, I went into a great health food store in Manhattan that I happened to walk by. I bought a lot of yummy stuff, including this bag of dried mango. I had about 3 pieces on the way home.
When I got home around 6, I was hungry and ready to eat, but I knew Loren wouldn’t be home until almost 8. So, I made myself a light snack of some “Food Should Taste Good” Buffalo Chips with some of the leftover guacamole salad I made on Tuesday night. I bought these chips up for the first time today and really loved them. I could taste how natural and simple the ingredients were; there are only 5 total ingredients in these chips, and I can recognize them all by name!
I had a few more while waiting for Loren to come home. I also sipped some Yogi “Calming Tea”… Stephanie commented on my post the other day and recommended I try this tea to help relieve stress/ nerves. Well, I saw it today at the health food store and thought I would try it out. I really liked it!
I think all of the roots/ herbs in this tea really did help to calm me. I’m curious to see what will happen if I continue to drink it over the next week or so- hopefully it will have even deeper effects. Here are the facts on this guy:

For dinner, I wanted something hearty, quick, and easy. I had picked up a bag of Whole Wheat Angel Hair pasta at the store, so I made that on the stove. It took 10 minutes from start to finish!
I also defrosted some of my famous HOMEMADE tomato and meat (turkey) sauce to go with. I made this sauce in August, and, because there is so much prep time that goes into it, I made enough for plenty of frozen leftovers. Sadly, this was the last of the batch. I’ll have to make more and share the “recipe” with you guys! (I don’t really use recipes, just my eyes and mouth…). I actually added some canned tomato sauce to the pasta as well because I like my pasta SAUCY and we didn’t have that much turkey sauce left.
I also made a salad with lettuce, tomato, carrots, and japaleno stuffed olives to go with.
With a glass of wine, of course.
For those of you who haven’t tried Whole Wheat Angel Hair pasta, you must! I don’t like the texture/ taste of whole wheat penne or thick spaghetti, but my sister, who loves pasta, turned me on to the idea of WW Angel Hair. Because the pasta is so thin, you don’t get the gross, chewy texture you do is some thicker WW pastas. Its really delicious, with all the same benefits. Plus, it picks up more of the sauce and Parmesan cheese!
I can’t believe tomorrow is already Friday. Yippee! And Monday is Columbus Day so its a long weekend for me! Sadly, Loren doesn’t get the day off, so I will be hanging solo- but relaxing. Any of you guys get Monday off as well?
