Morning! It’s a crisp, cool, sunny day in Brooklyn and I know I just can’t spend it (all) inside working!
I slept in again this morning and headed straight to the gym when I woke up. I did 40 minutes on the elliptical watching Law & Order (best show- always makes the time go by… and if I think about hurting the bad guys, I go faster on the machine… JK- kind of). I then did 15 minutes of abs and weights on the mat. I’m feeling stronger and better each day, so I must be doing something right! Instead of exercising almost every day (as I was over the summer/ September), the last couple of weeks I’ve been exercising every other day at the gym and taking walks or stretching on the days in between. I think its been very good for me to stay active and I now feel I can step it up a notch- but I will continue to listen to my body and take rest days when I need them.
After the gym, I stopped at Starbucks for a warm treat. I got an Awake Tea Latte with Skim Milk and one pump of Pumpkin Spice syrup. It was soooo yummy- and not sweet at all. On the way home, I was thinking about my favorite brunch omelet that I order when I go out- Spinach and Feta- and decided I could make one just as delicious at home.
I nuked some frozen spinach in the microwave for 1 minute and added a good hunk of feta to the bowl- just mixed it all with a fork. I made an omelet using 1 egg and 2 egg whites, cooked in olive oil. I just added the spinach & feta mixture and let it sit on low heat to cook together & combine flavors. I heated a whole wheat pita and topped my eggs with tons of hot sauce. It was such a satisfying, well-rounded meal.
Hot sauce makes everything better!
Today I plan to:
- Find a good Farmer’s Market that is open on Sundays in Brooklyn
- Go to said Farmer’s Market and buy lots of fruits and veggies for the week
- Get some law school stuff filled out and sent off (!)
- Do a little cleaning and organizing in the apartment
- Buy cat food
- Have dinner with my parents (might make it at home, might go out… we’ll see..
