Last night, Loren made an excellent dinner: baked falafel, humus, feta, and whole wheat pitas with a side of roasted broccoli. It was so nice to come home to this wonderful spread after working late and walking home in the cold.
I just stuffed all the goodies (except for the broc) into a warm pita- and topped it all with lots of hot sauce, obviously!
I love the combination of creamy humus with crunchy veggies and salty feta- nothing beats it.
I had 1 Newman’s Own Oreo for dessert. They are organic, so they are healthy, right?
It was the perfect thing to satisfy my sweet tooth.
For breakfast today, I made my best tasting batch of oats yet! I used:
- 1/2 cup almond milk
- 1/2 cup water
- 1/2 cup oats
- 1/2 banana
- big scoop of pumpkin
- tbspn of PB
- Pumpkin Butter!! (star ingredient)
- Sprinkle of nuts and raisin trail mix (co-star ingredient)
I also stopped by Starbucks on the way back from the gym (where I did 35 minutes on the elliptical, 20 minutes of strengthening) to get a Skim Awake Tea Latte with 1 pump of Pumpkin Spice (Whoops! I’m addicted and the Starbucks is directly between home and the gym… I might need to take a different route… but I can’t resist!)
All of the flavors and textures worked together beautifully. I love the contrast of crunchy trail mix on top of creamy oats.
This was, honestly, one of the best breakfasts I have EVER had. I will definitely be making this again very soon!
