Hi guys! Hope your week is off to a good start.
My Monday started off with a great, very Pumpkin-y bowl of oats and 15 minutes of meditation (!). Right when my alarm went off this morning, I sat up, set my alarm for 15 minutes, and closed my eyes to focus on my breath. It was weird to do it first thing in the morning, kind of half asleep, but interesting to see how, even in that state, it was so easy to get annoyed and stressed about construction noises on my street, noises coming from upstairs, and thoughts in my head… habit, I guess.
Meditation was followed by a bowl of oats- with a new star ingredient:
Loren bought this Pumpkin granola at TJ’s, but didn’t even tell me about it! I saw it in the pantry this morning and was psyched! It basically tastes like granola + pumpkin butter- yum!
So today’s bowl was PUMPKIN to the max! It had:
- 1/2 cup water
- 1/2 cup almond milk
- 1/2 cup oats
- 1/2 banana
- Scoop of pumpkin
- 1 tspn of PB
- Pumpkin Butter
- A sprinkle of pumpkin granola!
I had a glass of Emergen-C to start off my day as well.
These oats were delish, but I couldn’t actually finish the bowl! I was rushing to get to work on time, and oats aren’t something I can just scarf down. They are filling!
While the oats heated on the stove, I put lunch/ snacks together for the day:
- A turkey, lettuce, and cheese sandwich with mustard on whole wheat
- A Macoon apple from the Farmer’s Market
- 1/2 a banana
- A “run” glo-bar
I chose this guy because it was lower in calories than many of the others, with 120 per bar. It was just as yummy as the bar I tried this weekend- again nice and chewy, with a lot of great crunch!
I had kind of a stressful day at work, and instead of working out when I got home, I just plopped down on my couch. I needed to think through a bunch of stuff. I was hungry again (not sure if it was out of stress or real hunger) so I had a bowl of cottage cheese with a sprinkle of granola.
I ended up eating another 1/2 cup of cottage cheese. Hey, I guess if you are going to stress eat, better to do it with cottage cheese than almost anything else!
When Loren got home and dinnertime rolled around, I wanted something light, so I made a “fruity” salad! It was really refreshing and delicious, with:
- Mixed Greens
- Chopped cucumber
- Roasted Asparagus (Mixed with EVOO, salt, and pepper; 10 mins in oven at 350)
- Mandarin Oranges
- Sliced strawberries
- And 1/2 can of TJ’s wild salmon
I dressed the salad in a simple mix of whole grain mustard, lemon, olive oil, and sherry vinegar. It was nice and light!
On the side, I munched on some whole wheat crackers. Gotta get those carbs in somehow!
I loved the mix of the oranges and strawberries in this salad. I don’t usually put fruit in my salad, but this has inspired me to experiment further. Maybe I will use real oranges next time… seeing as they are in season and all!
I’m hoping to get into bed early tonight. I don’t know about you, but I can’t go to sleep without reading for a while first, so I like to get into bed with plenty of time…
