Good evening! I can’t believe the weekend is over- it flew by!
This morning, Loren made the most amazing Sunday morning breakfast, featuring this guy:
I picked this box up at TJ’s a few weeks ago and this morning was the perfect opportunity for us to try it. Loren made breakie while I worked on an application. Got another one sent off today- yes!
He used the directions on the box and added egg, almond milk, and sunflower oil instead of butter (he can’t eat dairy). He also sliced up a banana and added it to the mix.
The pancakes came out beautifully- and tasted amazing!
I topped my two with cottage cheese, pumpkin butter, and a drizzle of real maple syrup.
I could really taste the pumpkin in the batter, with hints of cinnamon and spices. It basically tasted like healthy pumpkin pie. And cottage cheese was the perfect addition for some extra protein and staying power.
We were both really impressed. Good job, TJ”s, once again!
After breakfast, we worked for a little while and then went outside to enjoy the gorgeous weather we had today. It was in the 60s and sunny. We took a really long walk down the Brooklyn Promenade. Along the way, we ran into a big crowd of people and their dogs dressed up in Halloween costumes! I think they were doing some sort of march/ costume contest. It was the cutest/ funniest thing I have seen in a long time, so, of course, I took pictures!

The doggie contest was definitely one of the highlights of the day. The other was my first few steps onto the Brookyln Bridge. See, I am deathly afraid of heights, but walking across the Brooklyn Bridge is a “must do” NYC activity- especially for proud Brooklynites. So, today, I faced my fears and walked about 75 yards of the bridge. Not much, I know, but a big accomplishment for me! It is my mission to cross the bridge by next summer, so I will walk a little more each time.
