I didn’t get around to posting last night because I came home from work at 9:45, ate dinner, and passed out. You understand…
Also, my computer (which is now fixed and back from the shop) still needs/ needed a lot of updates. Its back to the plain old operating system, so I had to re-download Microsoft Office this morning; I still have to upload iphoto and a bunch of other programs. This computer is old and on its last leg, and I really don’t want it to crash again in a few months, so I am seriously considering getting a new one. This time I will back up!
Yesterday was cold, grey, and rainy… as is today. I find it really hard to be in a good mood with this kind of weather… I wonder if you guys have any tips for staying happy even when it is miserable out. I love sleeping when it is cold and rainy, but not much else. I am a true Florida girl at heart, I guess. I love the sun!
Yesterday’s eats were pretty mellow- I was craving sugar all day (I think for a pick me up) and tried to curb my cravings by eating healthy snacks throughout the day.
I started off with a Morning Glory Muffin (carrot, apple, raisins, etc) from a bakery really close to my apartment. I was rushing to work and wanted something healthy that would hold me over. I saw these little Smuckers PB packets at work and figured that smearing some on would give me the staying power I needed.
These muffins are awesome- I love that they have real, big pieces of carrot and apple.
Lunch was nothing too special- just a turkey and cheese sandwich with mustard on whole wheat with some carrots and cukes on the side (dipped in humus). I warmed the sandwich in the microwave- cheese is always better a little melted!
After lunch, I had to got to an appointment in Manhattan. By the time I got home, I was exhausted. I am still getting over my cold (which is now more of a cough) and I guess I needed rest, because when I got into bed, I passed out for 1 hour! It felt great, but I was really groggy when I woke up at 4:30 and had a hard time getting ready to go back to work. So, I made a mug of hot tea, and had a chocolate granola bar from TJ’s. I ate 2 rolos (no picture) that I had bought earlier this week- and then I threw the package out. I know it’s a waste, but I don’t want to be snacking on sugar for energy- see you later rolos!
When I arrived home at 9:45 last night, I had a lovely spread laid out in front of me. Loren had made dinner and waited to eat with me. What a guy, huh? I’m lucky!
He made salad, roasted broccoli, baked cod (from TJ’s) and brown rice.
I made a really delicious dipping sauce to go with the fish, which included:
- a little bit of mustard
- the juice of 1 lemon
- curry powder
- 1 big tbsp of spicy relish
I’ve been playing around with making my own sauces instead of buying bottled ones, and this was GOOOOD!
I didn’t want rice, but was craving carbs, so I wrapped my fish, salad, and dipping sauce into a yummy wrap sandwich.
Mmmm… so delicious. Tastes like fried and battered fish, but its not- and its low in calories and fat! I love TJ’s!
We went to bed early last night and I got a full 8 hours. I woke up finally feeling better (though my ears are still clogged) so I hit the gym. I did 30 minutes on the elliptical (5 minute cool-down) and 15- 20 minutes of strength training. Man, the gym does wonders for my mood!
I was craving a big, warm bowl of oats. I don’t have banana or pumpkin, so today’s batch had:
- 1/2 cup almond milk/ 1/2 cup water
- 1/2 cup oats
- 1 tsp pumpkin butter
- 1 tbsp peanut butter
- cooked apples (cooked in pumpkin butter and cinnamon)
With a mug of hot chai tea. It hit the spot!
The apples got nice and caramelized. Pumpkin butter does the trick!
After that long post, I need to get myself together and get to work. Now that I have my computer/ life back, my posts should be more regular! Have a wonderful, beautiful, day… and don’t let the grey get you down! I’m working on it, too…
