Good (late) Morning, all! I’m loving the still-pretty-warm weather we are having this month. Yesterday I got into the fall season and made a delicious batch of pumpkin oats. It had:
- 1/2 cup multigrain cereal
- 1/2 cup water
- 1/2 cup almond milk
- 1 scoop canned pumpkin
- 1/2 banana
- 1 tbsp PB
- 1 tbsp Pumpkin Butter
- Sprinkle of trail mix
- 2 tbsp of flax seed
I guess it was a lot! It was delicious ( I think the trail mix makes perfect topping) but I couldn’t finish it. I hit a wall about 2/3 through and just couldn’t eat more. I think the oats + PB combo is reaaaally filling!
I love taking food pictures in the morning light. They come out so much more beautifully!
One hearty spoonful…
I packed my lunch and decided to snap some photos of it all ready to go at home, so I didn’t have to lug my camera to work. I tend to over-pack for the day and bring lots of snacks just in case I get really hungry. I would much rather have too much than have to go out and buy a less healthy food item to munch on. Also, I worked from 12-8 yesterday, so I am never sure how hungry I will be.
My eats for the day included: brown rice and beans, baby carrots, grapes, a Nature’s Path granola bar, an apple, and a TJ’s yogurt.
I ate all of it except for the yogurt. I ended up getting a hot chocolate (half milk, half water) when I was out, so I didn’t need the yogurt.
The beans and rice were delicious because I added some salsa to the mix and let all of the flavors combine for a while in the fridge overnight. It was perfect!
By the time I got home, around 8:30, I wasn’t too hungry and just wanted something quick and easy for dinner. I didn’t feel much like using the stove, so I just had a toasted sandwich with turkey bologna, cheddar, and tomato on Quinoa Bread- with some yellow mustard. My goblet was filled with sparkling water and a splash of real (unsweetened) cranberry juice.
Because I am weird, I had some bizarre “sides” with my “entre”. They included:
A quarter of an avocado,
Some wasabi peas,
and some grapes.
Then I made the mistake of watching ‘Diners, Drive-ins, and Dives” on the food network. Of course, all of that delicious looking diner food made me hungry! But I was “good” and just munched on some baby carrots- I knew it was fake hunger and they hit the spot.
Then I hit the sack and slept for 9 whole hours! I’m like a baby- I need way more sleep than most people but I usually don’t get more than 8. Because I’ve been exercising for the last 3 days and my calves are really sore, I gave myself the morning off, and I used it for some zzzz’s. I guess I needed it!
