So, I need to catch you up on the last few days of eats! Not to toot my own horn, but I feel good about the choices I have been making to stay healthy and fit before the holidays. Around this time, there are always more dinners out, parties, food at work, etc., and I think that, while its important not to deprive myself, it’s also important not to see every meal as a time to indulge.
Tuesday morning, I did an exciting new workout- one I have been reading about for a while: the 30 Day Shred! I bought it on Amazon for $10 and it was totally worth the big bucks! It only takes 22 minutes, but really worked my muscles and pushed me cardiovascular-ly. And I like working out “with” Jillian- she pushes you to keep going when things get tough and has some creative ways of incorporating cardio & strengthening, upper & lower body.
I was in a rush that morning, so I just grabbed a banana when I ran out the door. For lunch, I had a salad with lettuce, cukes, cherry tomatoes, carrots, and some tuna salad. I dressed it in simple oil and vinegar.The tuna gave me some great staying power and I really wasn’t hungry all afternoon. Around 5, I munched on some “healthy” rice chips (1 serving) just to hold me over to dinner.
We didn’t have much in the fridge after the weekend vacation, so dinner was thrown together using some staples: a whole wheat tortilla, a Dr. Prager’s veggie burger (mashed in), and some cottage cheese one the side.
I threw some carrots in there, too! Gotta get some veggies in at every meal.The veggie burger “quesadilla” was really good! I put a little bit of cheddar in it for some extra flavor. I dipped it in the cottage cheese which was delicious- it served as a healthy sour cream.
Later that night, I ate a banana because my tummy started grumblind again.
Yesterday morning, after 35 minutes on the elliptical, I came home and made a quick breakfast: a peanut butter, pumpkin butter, and banana sandwich on Ezekial Bread. With a Skim Awake Tea Latte with Pumpkin Spice.I feel so much healthier when I make something at home rather than grabbing something at a deli/ coffee shop on the way to work.Yesterday we had a staff meeting, which I knew would be catered by an Italian restaurant. Italian food can be tricky for the waistline, but I was happy with my choices.I took a lot of salad, skipped the baked ziti and meat lasagna, and instead went for 2 meatballs (yay for protein) and a small piece of eggplant parmesan, just to get a taste of one of my favorite dishes without all of the calories.
Snack was a bowl of carrots and dip.And dinner took place here:My parents are visiting and took us out to the Metropolitan Opera! Before the opera, we had dinner at the fancy shmancy Grand Tier restaurant. The food was yummy!
Seared salmon on top of brussel sprouts. The brussel sprouts had some pancetta mixed in and it all went together so nicely.We ordered dessert, but I gave mine to my dad. Figured it wasn’t worth the splurge- I have plenty of sweets to look forward to in the weeks to come.
Now off to work- have a great day! The weekend is (already) almost here!
